Chicken Soup – As Easy As It Comes.

Ingedients – cost less than $10.

- 1 precooked rotisserie chicken (warm or refrigerated)

- 1 qt chicken broth (optional – you can make your own with the chicken)

- 1 Package of coleslaw mix or chopped vegetables (16 ozs or about 2 1/2 cups)

- 1/4 Stick of butter

- Spices: Salt, Pepper, Poultry seasoning

Prep – Approx 20 min

In a skillet (or the cooking pot if you’re not going to slow cook it) melt the butter and saute the entire slaw/vegetable mix. While your doing that start pulling apart the chicken separating the meat in the slow cooker and the skin bones and fat in another container. Save it if you want to make some more broth.

Once the slaw/vegetable mix is sauteed dump into the cooker and cover with the broth. In the slow cooker put it on high cook. If you’re cooking it on the stove top bring it to a boil and then down to simmer. Continue adding the chicken as you’re separating it.When you’re done separating the chicken and adding it to the soup add enough water to cover the solid ingredients. Season with salt, pepper and poultry seasoning to taste.

If you want to make a richer soup (recommended) put the fat and skin and bones in a different pot, cover it with water, and bring it to a slow boil. Pour off the broth liquid into the soup to your taste. Add more water to the skin and bones boiling pot and continue slow boiling to get everything you can out of that poor chicken.

Cook Time – Since the chicken is precooked you won’t have to slow cook it on high long (2 hours tops). About the same time works simmering on the stove top after bringing it to an initial boil.
