Baked Honey Dijon Salmon

Ingedients – cost less than $10-15 (depending on cost of fish and your preferences in selection)

- 1 lb of salmon fillet

- 2 cups of broccoli florets

- 2 tbsp peanut oil

- 4 tbsp dijon mustard

- 1.5 tbsp honey

- Spices: Salt, Pepper, dill – to taste

Prep – Approx 10 min

Preheat a conventional oven to 400 degrees.

In a small bowl combine dijon, honey, and spices into a drizzling  sauce.

Spray some non-stick in a 9″ X 13″ casserole dish. Cut salmon in half if necessary to fit in dish. Arrange them staggered side by side and fill in the “holes” with the broccoli.

Drizzle the honey mustard on the salmon and the peanut oil on the broccoli. Add salt and pepper to taste on the broccoli.

Cook Time – 15-20 min
