Protein Pancakes

I got this recipe from Amy Perry. Her and her husband Seth are top notch trainers as well as really good friends of mine. Check out their  business EYES ON YOU fitness training.

They taste great (the pancakes that is, not Seth and Amy) and are a good way to get a little more protein in your breakfast without ALL of the carbs that normally come with pancakes.

Ingedients – $8 tops

- 6 egg whites

- 1 cup cottage cheese

- 1 cup oatmeal

- 1/4 teaspoon of vanilla extract

- 1 cup of blueberries

- honey or maple syrup

- nonstick cooking spray

Prep – Approx 10 min

Put egg whites, oatmeal, cottage cheese, and vanilla extract in a blender. Set it on it’s lowest setting and blend the ingredients until it looks like. . . you guessed it, PANCAKE MIX.

Cook Time – 15 min

Heat your pan or griddle, coat with the non-stick and make pancakes. It’s that simple.

Add blueberries on top or you can mix them right in the batter before you cook them. You can do all kinds of crazy things like adding bananas or whatever. I once saw a guy put peanut butter on his! Go ahead and put some butter on those fools if you want to.  I don’t care. I’m just happy that your going to get a little more protein in your breakfast.
