I got this recipe from Amy Perry. Her and her husband Seth are top notch trainers as well as really good friends of mine. Check out their business EYES ON YOU fitness training.

They taste great (the pancakes that is, not Seth and Amy) and are a good way to get a little more protein in your breakfast without ALL of the carbs that traditionally come with pancakes.

Baked Honey Dijon Salmon

Baked Honey Dijon Salmon

Spray some non-stick in a 9″ X 13″ casserole dish. Cut salmon in half if necessary to fit in dish. Arrange them staggered side by side and fill in the “holes” with the broccoli.

Drizzle the honey mustard on the salmon and the peanut oil on the broccoli. Add salt and pepper to taste on the broccoli.

Chicken Soup – As Easy As It Comes.

In a skillet (or the cooking pot if you’re not going to slow cook it) melt the butter and saute the entire slaw/vegetable mix. While your doing that start pulling apart the chicken separating the meat in the slow cooker and the skin bones and fat in another container. Save it if you want to make some more broth.
